Vanilla composters have exactly one job: turn organic scraps into bone meal. Compost takes that block and opens it right up, replacing the fixed output with a vanilla styled loot table. Because it is an ordinary loot table, anything you can express in a data pack you can express in your compost, from different rewards to modded compost items or a deeper, more realistic set of interactions built around the humble composter.
The mod also adds a loot condition that checks which compostables went into the block, so the input finally matters. Compost apples and you might get apple seeds; compost saplings and you could get modded mulch instead. Combined with origin based conditions, the surrounding world can shape the result too, since light level, elevation, biome and dimension can all steer what comes out, and conditions added by other mods, such as one that checks for snowfall, plug straight in.
That flexibility also makes Compost a quiet fix for renewability problems, letting items that arguably should be farmable become obtainable through composting. The default loot table is set up as a showcase for the compostable matching condition and still keeps bone meal available for villager farmers, and on game versions with the necessary conditions you may find mushrooms sprouting in a composter that has been left out in the rain.
